These Chicken Stuffed Samosa Rolls are a perfect blend of crispy pastry and flavorful spiced chicken. Simple to make, yet packed with bold Middle Eastern and South Asian-inspired spices, they’re the ideal appetizer or snack for any occasion! Bil Afya!

Ingredients

Half a packet of samosa leaves (about 250g)

2 medium onions thinly sliced into semicircles

2 tablespoons chopped dill

2 tablespoons chopped coriander

Vegetable oil for frying
Filling:

2 cups shredded cooked chicken

2 medium-sized finely chopped onions
-
1 teaspoon minced garlic
-
1 grated carrot
-
1 green bell pepper finely chopped

1 minced green chili pepper
-
1 teaspoon mixed spices
-
1/4 teaspoon black pepper

2 tablespoons soy sauce
Sauce:
-
1/4 cup cream cheese
-
1/4 cup cooking cream
-
1/4 cup milk
-
1/4 teaspoon salt
-
1/4 teaspoon black pepper
-
1/4 teaspoon dried oregano
-
1/4 teaspoon dried basil
Directions
Start by frying the chopped onions in heated oil over medium heat for about 3 minutes. Add garlic, green chili pepper, carrots, green bell pepper, and shredded chicken.
Season with soy sauce and spices and cook for an additional 3-5 minutes then turn the heat off and allow to cool.
To prepare the sauce whisk the ingredients together in a deep bowl or using a blender or food processor.
To assemble the samosa rolls, place the sliced fresh onions on the base of your baking dish, then sprinkle the chopped dill and coriander over the onions.
Cut the samosa leaves in half horizontally, then stuff each half sheet with 1 teaspoon of the filling, roll it into a cylinder shape, and place it over the onions and dill in your baking dish.
Continue filling the samosa sheets and placing them in the dish until the dish is full.
Cover the samosa rolls thoroughly with the cream cheese sauce, then cover the dish lightly with aluminum foil.
Bake for 30 minutes then remove the aluminum foil and allow to cook for another 30 minutes or until golden brown from the top.
- Garnish with additional fresh coriander and dill. Serve hot and enjoy!
