Creamy Tuscan Chicken or better known as "Marry Me Chicken", is believed to have gained its name from the idea that it's so delicious, that anyone you make it for will be so impressed they might just propose marriage on the spot! This romantic notion, coupled with the dish's indulgent flavor profile, has made "Marry Me Chicken" a favorite in my kitchen and to many other home cooks looking for a special, heartwarming meal. Marry Me Chicken is a deliciously creamy dish made with tender chicken breasts, sun-dried tomatoes, fresh spinach, and a rich sauce of garlic, heavy cream, and Parmesan. Finished with fragrant herbs like thyme and basil, it's a flavor-packed meal that's easy to love.

Ingredients

4 boneless, skinless chicken breasts

Salt and pepper, to taste

1 teaspoon garlic powder

2 tablespoons olive oil
-
3 cloves garlic, minced
-
1 cup heavy cream
-
1/2 cup chicken broth
-
1/2 cup sun-dried tomatoes, chopped
-
1 teaspoon Italian seasoning
-
1/2 cup grated Parmesan cheese
-
1 cup fresh spinach, roughly chopped
-
A pinch of red pepper flakes (optional for heat)
Directions
Season chicken breasts with salt, pepper, and garlic powder.
In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until golden brown on both sides and nearly cooked through, about 5-7 minutes per side. Remove chicken from the skillet and set aside.
In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream and chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the sun-dried tomatoes, Italian seasoning, and Parmesan cheese. Bring to a simmer, then reduce heat to low.
Return the chicken to the skillet, spooning the sauce over the top. Add the chopped spinach and sprinkle with red pepper flakes if using. Cover and simmer for 10-12 minutes, or until the chicken is cooked through and the spinach has wilted.
Check the seasoning and adjust if necessary. Serve the Creamy Tuscan Chicken hot, ideally with a side of pasta, or garlic bread, or over a bed of fresh greens.

Did you know? Spinach was once used as a secret code among medieval monks. They would embed images of spinach in their manuscripts to signal when they were hosting a feast. If spinach was on the menu, it was a sign of a particularly lavish meal.
