These Pistachio Blondies are a delicious twist on the classic treat, filled with rich, nutty flavors. Soft, buttery, and studded with crunchy pistachios, they offer a perfect balance of sweetness and texture, making them an irresistible dessert or snack.

Ingredients
For The Blondies:

5 eggs + a few drops of vinegar

3 tablespoons vanilla extract

1 teaspoon ground cardamom

¼ teaspoon saffron

1 cup sugar
-
1 cup breadcrumbs
-
1 cup finely ground pistachios

½ cup vegetable oil
-
½ cup liquid milk
For the Cream Sauce:

50 grams of butter
-
3 tablespoons sugar
-
½ cup cream cheese
-
¼ cup liquid cream
Directions
Beat eggs, vinegar, vanilla, and sugar until fluffy (about 10-15 minutes).
Gradually incorporate oil and milk, continuing to mix.
Combine cardamom, breadcrumbs, and pistachios, then fold into the wet mixture until even.
Grease and flour-coat a 20x30 cm dish. Pour batter in.
In an oven preheated to 175°C (347°F), bake for 20-25 minutes, or until the blondies are set and golden.
Warm cream cheese slightly, then whip with butter, sugar, and cream until smooth.
Spread sauce over baked blondies, then return to the oven until the top is golden.
Let cool, then slice into squares, garnish with pistachios, and serve! Bil Afya!
