Ingredients
-
4 salmon fillets (about 150g or 5oz each)
-
2 tablespoons honey
-
1 tablespoon soy sauce
-
1 tablespoon olive oil
-
1 teaspoon chili flakes (adjust to taste)
-
1 teaspoon garlic powder
-
Salt and pepper, to taste
-
2 cups cooked brown rice
-
1 avocado, sliced
-
1 cucumber, thinly sliced
-
1 small red onion, thinly sliced
-
1 carrot, julienned
-
Sesame seeds, and Fresh cilantro, for garnish
Creamy Mayo Chili Sauce:
-
1/2 cup mayonnaise
-
1 tablespoon chili sauce or Sriracha
-
1 teaspoon lime juice
-
1/2 teaspoon garlic powder
-
Salt, to taste
Directions
Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
Prepare the salmon: In a small bowl, whisk together honey, soy sauce, olive oil, chili flakes, garlic powder, salt, and pepper. Place salmon fillets on the prepared baking sheet. Brush each fillet with the honey mixture.
Bake the salmon for 12-15 minutes, or until cooked through and glazes are caramelized
In a small bowl, whisk together mayonnaise, chili sauce or Sriracha, lime juice, garlic powder, and a pinch of salt until smooth.
Taste and adjust seasoning if necessary. For a thinner sauce, a little water or additional lime juice can be added.
Assemble the bowls: Divide the cooked brown rice among four bowls. Top with baked salmon, sliced avocado, cucumber, red onion, and carrot.
Drizzle each bowl generously with the creamy mayo chili sauce.
Garnish with sesame seeds and fresh cilantro before serving.
