We visited Thailand for the first time in 2023 and I loved it! Everything I heard about how delicious food is in Thailand was true and we were not disappointed at all! This is a salad inspired by my vacation in Thailand and instantly reminds me of the wonderful time we spend there! Enjoy!

Crisp cucumbers meet bold Thai flavors in this refreshing, tangy salad inspired by Som Tum. With zesty lime juice, savory fish sauce, a hint of sweetness, and a kick of chili, it's topped with crunchy peanuts for the perfect bite. Quick, easy, and bursting with flavor—just like Dalool’s Kitchen loves it!

Ingredients
For the Salad:

1/2 Kilo cucumbers sliced into semi-circles (500g)

1 small red onion, thinly sliced into semi-circles

2 tablespoons chopped roasted peanuts - optional

2 tablespoons chopped cilantro

Red or green chili pepper sliced into semi-circles - optional
Dressing:
- 2 tablespoons water
- 4 tablespoons Thai sweet chili sauce
- 1 tablespoon Fish or Oyster sauce
- 1 teaspoon rice vinegar
- 1 teaspoon lime juice
- Salt and pepper to taste
Directions
To make the dressing, combine all the ingredients for the dressing in a small saucepan.
Cook on low heat for about 2 minutes until the sauce thickens.
Turn the heat off and allow to cool.
Add sliced cucumbers and onions to a large bowl, drizzle with the cooled dressing, and mix well.
Top with peanuts if using and chopped coriander and serve chilled.
