American Goulash – American Comfort Food

"I love one-pot dinners and always have them in rotation in my kitchen. American Goulash is a dish I stumbled upon when I was looking for pasta recipes. It’s a tasty and hearty dish that is easy to make and can be customized in many ways, including making it vegetarian. Ingredients:

  • 500g ground beef
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cans diced tomatoes (400g each)
  • 1 can kidney beans, drained and rinsed (400g)
  • 1 can black beans, drained and rinsed (400g)
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add the ground beef, cook until browned, then remove any excess grease.
  2. Add onions, garlic, and bell peppers. Cook until the vegetables are softened.
  3. Stir in diced tomatoes, kidney beans, black beans, beef broth, and all spices.
  4. Bring the mixture to a boil, then reduce heat and let simmer for 20-30 minutes, stirring occasionally.
  5. Taste and adjust seasoning if needed. Serve hot, optionally garnished with shredded cheddar cheese and fresh cilantro.
