Chicken Stuffed Samosa Rolls

 

These fusion rolls combine the best of Indian and Arabic cuisine, with a flaky pastry encasing spiced chicken filling. Ingredients:

  • Half a packet of samosa leaves (about 250g)
  • 2 medium onions, thinly sliced into semicircles
  • 2 tablespoons chopped dill
  • 2 tablespoons chopped coriander
  • 2 cups shredded cooked chicken
  • 1 teaspoon minced garlic
  • 1 grated carrot
  • 1 green bell pepper, finely chopped
  • 1 teaspoon Kuwaiti Spice Mix
  • 1/2 teaspoon black pepper
  • 2 tablespoons soy sauce
  • Vegetable oil for frying

Sauce Ingredients:

  • 1/4 cup cream cheese
  • 1/2 cup cooking cream
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano

Instructions:

  1. Fry the chopped onions in heated oil for about 3 minutes. Add garlic, chili pepper, carrots, bell pepper, and shredded chicken. Season with soy sauce and spices and cook for an additional 3-5 minutes.
  2. To prepare the sauce, whisk the ingredients together in a deep bowl.
  3. To assemble, cut samosa leaves in half horizontally, stuff each half sheet with 1 teaspoon of the filling, and roll it into a cylinder shape. Place in a baking dish, cover with sauce, and bake for 30 minutes.
  4. Garnish with fresh coriander and dill before serving.
