Chicken Stuffed Samosa Rolls
These fusion rolls combine the best of Indian and Arabic cuisine, with a flaky pastry encasing spiced chicken filling. Ingredients:
- Half a packet of samosa leaves (about 250g)
- 2 medium onions, thinly sliced into semicircles
- 2 tablespoons chopped dill
- 2 tablespoons chopped coriander
- 2 cups shredded cooked chicken
- 1 teaspoon minced garlic
- 1 grated carrot
- 1 green bell pepper, finely chopped
- 1 teaspoon Kuwaiti Spice Mix
- 1/2 teaspoon black pepper
- 2 tablespoons soy sauce
- Vegetable oil for frying
Sauce Ingredients:
- 1/4 cup cream cheese
- 1/2 cup cooking cream
- 1/4 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried oregano
Instructions:
- Fry the chopped onions in heated oil for about 3 minutes. Add garlic, chili pepper, carrots, bell pepper, and shredded chicken. Season with soy sauce and spices and cook for an additional 3-5 minutes.
- To prepare the sauce, whisk the ingredients together in a deep bowl.
- To assemble, cut samosa leaves in half horizontally, stuff each half sheet with 1 teaspoon of the filling, and roll it into a cylinder shape. Place in a baking dish, cover with sauce, and bake for 30 minutes.
- Garnish with fresh coriander and dill before serving.
