Pistachio Blondies – A Delightful Middle Eastern Twist

 

These Pistachio Blondies from Dalool’s Kitchen are a delicious fusion of chewy blondie texture and the nutty, rich flavors of pistachios. This easy-to-make dessert is perfect for any occasion, bringing a unique twist to a classic treat. Ready to indulge? Let’s get baking!

 

 

For the Blondies:

  • 5 eggs + a few drops of vinegar
  • 3 tablespoons vanilla extract
  • 1 teaspoon ground cardamom
  • ¼ teaspoon saffron
  • 1 cup sugar
  • 1 cup breadcrumbs
  • 1 cup finely ground pistachios
  • ½ cup vegetable oil
  • ½ cup liquid milk

For the Cream Sauce:

  • 50 grams of butter
  • 3 tablespoons sugar
  • ½ cup cream cheese
  • ¼ cup liquid cream

 Instructions:

  1. Beat eggs, vinegar, vanilla, and sugar until fluffy (about 10-15 minutes).
  2. Gradually incorporate oil and milk, continuing to mix.
  3. Combine cardamom, breadcrumbs, and pistachios, then fold into the wet mixture until even.
  4. Grease and flour-coat a 20x30 cm dish. Pour batter in.
  5. In an oven preheated to 175°C (347°F), bake for 20-25 minutes, or until the blondies are set and golden.
  6. Warm cream cheese slightly, then whip with butter, sugar, and cream until smooth.
  7. Spread sauce over baked blondies, then return to the oven until the top is golden.

Let cool, then slice into squares, garnish with pistachios, and serve!
